Ingredients for cooking beets with zucchini for the winter

  1. Beetroot 1 kg
  2. Onion 1 kg
  3. Zucchini or zucchini 1 kilogram
  4. Vinegar 10% 1 cup

Cooking beets with zucchini for the winter:

Step 1: prepare the beets.

Rinse the beets, cook until tender, then cool and peel. Grate the peeled beets on a medium grater and set aside for now.

Step 2: prepare the zucchini.

Peel the zucchini, cut it lengthwise in half and use a spoon to clean the seed core. Rub the peeled pulp in the same way as beets. Take the zucchini to the side.

Step 3: prepare the onion.

Peel onions and periodically rinse the blade of the knife with water, cut into small cubes.

Step 4: prepare the marinade.

In a large saucepan, mix vinegar, vegetable oil, sugar, salt, pepper, allspice and bay leaf. Bring to a boil over medium heat. Make sure everything is well mixed, and sugar and salt are dissolved.

Step 5: stew the vegetables.

Add onions to boiling marinade, mix and cook everything for 3 minutes.

Add beets and zucchini, mix everything very well.

Continue stewing the vegetables in the marinade for another 5 minutesmixing them often.

Step 6: we harvest beets with zucchini for the winter.

Arrange the vegetables in the marinade in banks, by volume 500 milliliters and sterilize the workpieces in the oven or in a pot of boiling water for 8 minutes. Larger cans need longer sterilization.
After that, the banks should be cooled, and then put away in a dark and cool place.
Attention: jars for blanks should be washed and warmed / sterilized, as well as lids.

Step 7: serve the beets with zucchini.

Beetroot with zucchini is a cold appetizer or salad. Pleasant taste and excellent combination will please you and your guests. So feel free to roll up a couple of jars so that in winter you have on hand a delicious beetroot with zucchini.
